How to enable Content Versioning?

Go to structure >> content types >> edit >> publishing options and check the box 'Create a new revision' in the node editing form

How to compare differences between revisions?

Install and enable 'Diff' module. A 'compare' tab on the revisions page will be visible to make comparisons
