Audit all GitHub repos for 1.1.0

This is something we've been doing for Islandora 7 for ages now, and I think there's value in bringing it over. I think each release should come with an audit/update of:

• Maintainers (good to refresh this regularly so we know that the people listed have recently volunteered)
• README files (we need a template; I'll make another issue)
• LICENSE files

I think this will also help to get things lined up for the Grand De-CLAWing, when we'll want these repos to meet the standards applied in big Islandora repo.

I've got a proposed spreadsheet here and I'm happy to take on organizing a team of auditors for this release, if others think this is a good idea.
