While investigating whether the next Quarkus version could fix quarkusio/quarkus#16358 for us, I realized that there are a bunch of dependency updates that will cause us to change some code - in particular io.opentracing
At the moment, this PR is not ready and rather a quick hack to get Nessie build against latest, unreleased, in-development Quarkus.
This change is
