[DOCS] Adds text about data types to the categorization docs #51145

This PR explains that categorization works best on machine-generated content and adds this information to the categorization documentation. It also renames the Categorizing log messages page to Configuring categorization then adds a Categorizing log messages sub-section to it.

This PR relocates content from a PR that would add the content to a file in the stack-docs repository. See the PR here: elastic/stack-docs#809
