Change to rolling logs

JabRef deleted old log files upon start. (Reported by @Doublonmousse at #10853 (comment) - thank you for the report!)

This PR fixes that.

Yeah, you cann use a colon in a file name and I would not use curly braces as well

I don't understand. This is a place holder replaced by tinylog. See https://tinylog.org/v2/configuration/#rolling-file-writer

We tried on Linux and it worked...
