Remove unused dependencies in next

Changes

Removed some unused dependencies so far. Also remove the root pnpm.peerDependencyRules.ignoreMissing config, as it doesn't look like we rely on it anymore. I ran a few pnpm i and a clean pnpm i and didn't see any warnings about it.
