In particular, which payment methods details are forwarded to the payment app?

+1 to this. Also +1 to the signature concept. Signing the requests is
critical for confidence in the ecosystem.

At the 20 July 2016 discussion of the payment apps task force [1], there was support and no objections to the proposal to send to the payment app only the subset of payment request data that is relevant for the payment app (e.g., only matching payment methods and their associated payment method specific data).
