AP-1574 More logs and new config for ease of debugging

Problem

Lack of logs hinders visibility over consumer issues.

Proposed changes

• Adding extra info logs
• Adding a new config debug_contexts which would allow the consumization of which contexts to enable to get more insights into what's happening in the librdkafka C library.
