The amazon.aws.ec2 module is deprecated and no longer receiving security updates.
amazon.aws.ec2_instance has been around for a while and should be in the default collections installed with ansible already since several versions back.
This PR switches the playbook to use the new ec2_instance module.
(I can't test this because I don't have access anymore, but it matches what I've done successfully elsewhere)
