Knob defaulting seems generally a bit borked #1349

Lots of ways to default now (rmb / set to default; double click; rmb and remove all text).

But they seem to work at best inconsistently and at worst not at all

For instance, defaulting the VA tuning knob or mix doesn't work. The fast SVF filter does. The LFO rate does not.

What's up with that?

- RMB has a typein which is focused and allows you to type in
  a value on all knobs. Some caveats though
- Doesn't work with temposync, surge-synthesizer#1347
- Bit of an accessible nightmare. Need a switch. surge-synthesizer#1348.
- Defaulting seems generally inconsistent or broken. surge-synthesizer#1349

but the core idea of "lets put the typein on the menu" works.
So this closes surge-synthesizer#1316

I can't reproduce this now i've done a clean build. Closing but remember it in case it comes back
