Looks like there were some backwards incompatible API changes.

CreateVersionedEntry validates that the API version of the entry is able
to be written to the server.

Currently this doesn't build as rekor 0.12.0 made some backwards incompatible changes and cosign still uses rekor 0.11.0

I'm not really happy about all the aws-sdk and alababa cloud indirect dependencies and I wish sigstore would endeavor to clean this up a bit but 🤷
