[3.16] Upgrade to Hibernate ORM 6.6.3.Final

Backport of #44391 to branch 3.16. We'll probably want it backported to 3.15 as well.

I switched to a more conservative behavior for bytecode enhancement in the last commit, especially because I'm not sure we want the failure in 3.15/3.16.
If you think we do want the failure, let me know and I'll drop the last commit.
