Support more types for data logging in LighterLogger

Description

Currently, only image and single scalar logging is possible. Implement other types as we work on different projects and update the list below:

• Multiple scalars
• Histograms Switch to MONAI inferers. Add LighterFreezer. Add custom collate functions. Add Logger fixes, epoch num logging, image preprocessing fix. Add loss and metric monitoring. Add seeding. Add model checkpoint load with prefix adjustment. #43
• Strings
• Audio
• Video Add histogram to logger #42
• ... more to add

The idea is to do these incrementally as we do projects with such data.
