The research template has a cohort-extractor based study definition. We should replace it with an ehrQL based dataset definition.

#106 doesnt replace chohortextractor (like you say in this issue) but starts by adding ehrQL placeholders and instructions how to switch from cohortextractor to ehrQL

Thanks, @milanwiedemann. I'm going to keep this issue open, because I think we really do want to replace (rather than augment).
