docs(examples/logs): include batch processor in pipeline

Description

The example for auto-instrumentation of logs with the OTel Collector specifies a batch processor in the config:

opentelemetry-python/docs/examples/logs/otel-collector-config.yaml

Lines 10 to 11 in ac3c189

	processors:
	batch:

However the batch processor is not included in the logs pipeline:

opentelemetry-python/docs/examples/logs/otel-collector-config.yaml

	logs:
	receivers: [otlp]
	exporters: [logging]

This PR adds the batch processor to the pipeline (assuming it should be there, otherwise I would suggest L10-L11 to be removed 😊).
