This updates references to Otto8 with Obot throughout the docs. I also introduced a lot of formatting improvements and fixed some typos.
There are some repos referenced in our docs that have not been moved to the obot-platform org yet, so I left the URLs referring to otto8-ai. This can be fixed later if we want. For now, we need to get these changes in.
