chore(prisma): cleanup adapter jsdoc

☕️ Reasoning

• Followup to chore(adapters): cleanup extraneous documentation in adapter and fix testing and release GHA #10854
• Removing superfluous "## Setup" and "## Schema" -type documentation from the index.ts JSDoc.
• This info is all in the docs/getting-started/adapters/prisma.mdx file as well. And is more up-to-date and includes schema definitions for all DB types there.
• No need to maintain 2 copies
