bump: [#4684] Update @azure/cosmos and @azure/core-auth dependencies to their latest version

Description

This PR updates the @azure/cosmos and @azure/core-auth packages to their latest version. This update caused some issues with the unit tests that were fixed by updating nock and all the generated records, the way how the Cosmos containers are created, and the improvement of the mockHelper functionality.

Specific Changes

• Updated @azure from 3.10.0 to 4.1.1
• Updated @azure from 1.4.0 to 1.7.2
• Updated nock from 11.9.1 to 13.5.5
• Updated all nock records for the unit tests.
• Updated the way the Cosmos containers are created, to use the name of the test instead of an incremental number.
• Updated how the mockHelper functionality replaces the instanceId property from the records.
