The SO part of the name is not really relevant but the fact that having it unset implies a default of 300s is.
A common configuration for DavMail is a server running with one long-running client (e.g. mutt) connecting via localhost. The default configuration of DavMail will cause the client to lose connection after a relatively short period of inactivity, with nothing in the server log unless logging is cranked up to DEBUG.

I've been trying out davmail and been pleased with it apart from my client (mutt) losing connection to the server all the time. I tested disabling the timeout and it does seem to fix my issue - undoing the change causes the issue to return. Please consider merging this, happy to tweak it further if you wish.
