docs: switch to MPL 2.0 license

I made this change intentionally, as I noted the CC0-1.0 license is not recommended for software.
Additionally, this source code is forked from Hashicorp's https://github.com/hashicorp/terraform-provider-scaffolding-framework which comes with MPL 2.0 licensing.
I am agreeable with its conditions.
