Updating coffeescript/smith dependencies

Updated the required coffee-script version to 1.7.0.

Documented usage with wintersmith plugin

Allowed for other plugins besides nib to be used.

Bugfix for CoffeeScript >= 1.7.0

CoffeeScript's compiler needs to be explicitly registered.

Tests will not run with CoffeeScript >= 1.7.0, addressing in later pull.
