[INFRA-3047] Switch OpenJDK installations to Adoptium (Eclipse Temurin)

As per https://blog.adoptopenjdk.net/2021/03/transition-to-eclipse-an-update/, the AdoptOpenJDK projects moved under the umbrella of the Eclipse foundation.

As part of this change, the "home" for OpenJDK installations moved from AdoptOpenJDK to Adoptium.

This EPIC tracks the tasks related to switching any OpenJDK installation that we have to the new Adoptium (Eclipse Temurin project).
