Use VolDictType for service schemas

Proposed change

Next step for the voluptuous update. Ref #120268
This PR fixes these kinds of mypy errors by "forcing" the schema dict type to be VolDictType instead.

Argument 2 to "async_register_entity_service" of "EntityPlatform" has incompatible type
    "dict[Required, All]"; expected "dict[str | Marker, Any] | Schema | All | voluptuous.validators.Any"
