Cleans up the partial object types for vertices according to ideas from #1249.
This makes quite a bit of code that benefited from the builder-style API. I think that's okay for now, as it doesn't make the code more complicated, and I think simplifying the APIs is worth more right now than the added convenience. Once the partial object API has settled down somewhat, it'll be worth looking into which convenience APIs to add back.
