What this PR does:
This should be the very last PR to cleanup our jsonnet/mixin, removing "cortex" references (except for metric names and default image until we'll have a public image for Mimir). In this PR I've changed the default overrides mountpoint from
/etc/cortexto/etc/mimirbut I've left it configurable (as it already was the configmap name).Which issue(s) this PR fixes:
