Fix Sentry BOM containing wrong artifacts

sentry-bom was containing wrong artifacts (e.g. test dependencies, test apps, missing compose artifacts, etc.). This PR fixes it.

Manually ./gradlew publishToMavenLocal. The result can be checked here
