style(groovy,it): Apply spotless on groovy files and java files in src/it/ #6301

Description

This change increases the scope of the spotless configuration to apply rules on groovy files and java files below src/it/**.

The change was originally introduced and discussed in PR#5979 (Discussion).

  • Breaking change (fix or feature that would cause existing functionality to change
  • Chore (non-breaking change which doesn't affect codebase;
