Rename PrivacyRequestIdentity schema to Identity

Purpose

I plan to use the PrivacyRequestIdentity schema in the consent request workflow. In preparation for that I am renaming it to Identity to give a more generic name.

Changes

• Rename PrivacyRequestIdentity to Identity
