RC3 update all formatters to have JMESPATH + extra media selection capabilities

What?

Some of our formatters need more options as we move into more interesting use cases, I will make macro issue:

1. 3D Model formatter. Allow for STL to pass an STM too and/or a texture for full UV mapping
2. Video and Audio. Fix number of media so 0 means all. Also other numbers are not working over 3. Enabled JMESPATH selection option for more finer grained option. We need also a STL/VTT matching option. How?
3. Mirador bump to 3.1.1
4. replay bump to 1.4.3 (same as the demo site)
5. Image (openseadragon) same as Video. Allow JMESPATH driven image selection AND bump Annotorious + fix Annotation window popping up (but blocked, good) for anonymous users.

General:

• allow TOC type index structures ? Or should we just go for IIIF Manifests for those use cases and relay on Mirador for Video and Audio?
• Allow grouped viewers for PDF/AUDIO/VIDEO. Many files, single viewer.
