[core.savedObjects] Remove _shard_doc tiebreaker since ES now adds it automatically. #92295

In #89915, we had to manually add the _shard_doc tiebreaker that Elasticsearch adds internally for search requests using Point-In-Time (PIT).

Now that elastic/elasticsearch#68833 has merged, ES will automatically apply the field as a tiebreaker for all PIT requests, so we don't need to do it manually any more.

This PR simply cleans that behavior up and should have no functional changes. Planning to merge for 7.12 as automatic tiebreaking has been merged to 7.12 as well.
