We're setting up the 9.0.0 version in #192040. Indices based on Elasticsearch 7.x are not able to be loaded.

@elastic/kibana-core we need to run tests against 8.x indices.
We could get the same test coverage if we use the same data but on 8.x indices rather than 7.x. Field names may have changed, along with other breaking changes between 7 and 8.
