_cat/indices API output looks odd, like a quoted string

Docker snapshots.

Describe the bug:

The output of _cat/indices looks weird. It's a quoted string with "\n" in it. See screenshot.

Expected behavior:

Should look like a table.

Didn't see this before 8.3.

Tested locally and could not reproduce this bug. This looks like a duplicate of #130635 and we fixed it with #130638 in v8.3
