Thanks @jbaiera. I originally didn't backport these to 7.10 or 7.9 per our docs backport policy. However, I have no problem with it, particularly if it's causing issues for users.
I pushed dfb987a to add some content that's referenced in this note. I edited it to refer to elasticsearch.yml in place of the update cluster settings API. Please note that it does contain a snythetics reference that'll need to be removed.
If those changes look good to you, then I think this PR is good to go. 🚀 Thanks again!

Clarify in 7.10 docs how to disable the automatic (re)creation of stack templates.
This will be back-ported to 7.9 with edits (synthetics-- did not exist in that version)
Note that the contents differ from the 7.11 pages because the stack template setting was made dynamic in that version.
