When installed via homebrew, the formula adds this patch https://bitbucket.org/mituharu/emacs-mac/pull-requests/2/add-multi-tty-support-to-be-on-par-with/diff, which purports to solve the multi-tty issue. The user experience I've had with emacs-plus is not a good one.
I don't know doom well yet, but it looks to me like you failed to install
some fonts or icons. Works perfectly for me AFAICT.

I've bounced between emacs-mac and emacs-plus myself. Currently emacs-plus 27 and 28 are quite slow and laggy for me where as emacs-mac is pretty smooth. Switching to emacs-mac had a noticeable improvement:
