Closes Add Collection Types doc #679
Most collection fields will be covered in the upcoming configuration doc (#685), but the difference between file, folder, and filter collections requires enough explanation to merit a separate doc. This will be linked from the config doc, and when it's complete, this doc will link back to the config doc.
