Moves enzyme deps to peerDependencies to avoid errors with multiple Enzyme versions (e.g. Enzyme Internal Error: configured enzyme adapter did not inherit from the EnzymeAdapter base class).

Also renames enzyme adapter to enzyme-adapter-react-16 to align with Enzyme's published adapters.
