This depends on #960, as Kogito Runtimes is already on the Java 17, Maven 3.9.6, and Quarkus 3 stack.

This is blocked by apache/incubator-kie-kogito-images#1750, as the images needed by packages/kn-plugin-workflow cannot be upgraded to the latest timestamped SNAPSHOT as they're broken because of the rename that happened to upstream Maven modules.

To test if everything is working, you can temporarily change packages/online-editor/build/defaultEnvJson.ts to point to your fork's PR to https://github.com/apache/incubator-kie-sandbox-quarkus-accelerator. Then run pnpm start on packages/online-editor to test it.

This is not ideal, as we should actually have an env var to do that customization, though.

I already addressed the fact that we're still pointing to the kiegroup repo there at:
