Fix incorrect use of assert - breaks release builds

Occasionally I forget that assert() calls are completely omitted in NDEBUG (release) builds. This is bad:

assert(esp_task_wdt_init(CONFIG_ESP_TASK_WDT_TIMEOUT_S, true) == ESP_OK);
