Upgrade Alibi to 0.6.0

What this PR does / why we need it:

• Upgrade Alibi server to use 0.6.0 version and Python 3.7.10
• Upgrade sklearn to 0.24.2
• Upgrade xgboost to 1.4.2
• Add docs outlining version changes above
• Update explainer_examples to work with 0.6.0
