feat: add macOS socket support and enable macOS CI

We need to support macOS in the adaptor runtime.

What was the solution? (How)

This PR adds support for creating macOS sockets and adds macOS to the CI runners.

What is the impact of this change?

The adaptor runtime now supports macOS

How was this change tested?

• Ran the unit tests on macOS and Linux
• Morgan manually verified the macOS IPC authentication code works by manually running an adaptor in background mode on macOS:

app-openjd daemon run --connection-file ./connection.json --run-data file://./run-data.yml

app-openjd daemon stop --connection-file ./connection.json
