Modify links to the RTClib::now() function.

This PR updates README.md by adding links to the documentation for each public function in the library. Some minor edits are made to a couple of documentation files, also, for readability.
I believe this PR completes my initial contribution toward the documentation. There is always room for improvement of course, and I shall remain interested in helping where I can.
This PR will be in a pending status over the weekend in hopes that you may afford some time to review it. Planning to merge in on Monday in any event.
