This PR updates the project dependencies:

Kotlin migrated 1.9.10 -> 2.0.20 (for sample apps and ble-ext module)
Gradle tools to 8.1.2 -> 8.5.2
Gradle Wrapper 8.3 -> 8.7

Sample apps were migrated to latest Material and Nordic Common library.
