I've been doing multi-platform builds from an older Intel machine, and this updates the build to work on newer Apple silicon machines and newer MacOS/Xcode versions.

I did multi-platform builds for v0.5.0 from an older Intel machine, and this updates the build to work on newer Apple silicon machines and newer MacOS/Xcode versions.
This is a basic start, but there’s probably some more cleanup to do.
