What does this Pull Request do?

Adds in the docs folder for the 2.0.0 version, it also has some final tweaks to the Gradle build I needed when I published to sonatype.

How should this be tested?

The docs are just docs and the Gradle build changes are only for the release and should not affect normal building of this tool.
