Fix timeouts from aws-sdk kinesis tests

What does this PR do?

Not sure why the timeout was being adjusted back down from unlimited, but leaving it unlimited should allow kinesis to actually finish creating the stream...

Motivation

aws-sdk has been a continuous pain in the quest for green CI. 😅

Part of a change, anyway. The this.timeout(0) had the right idea, but not sure where the resetting it to 2000 later came from. It's not a timer from the point you can this.timeout(...), it's a timer from the start of the test, so that would just make tests fail immediately if they took more than 2000ms. 🤔
