What this PR does / why we need it: A user reported being confused that clusters created using ACS Engine didn't appear in az acs list. This PR updates the documentation to clarify the relationship between ACS and ACS Engine.

Which issue this PR fixes: fixes #1500

Special notes for your reviewer: I also fixed some typos while I was in there which has created a bit of noise in the diffs - the meat of the proposed change is in the first commit of the PR.
