Docker compose files do not recommend adding versions anymore. Also, port 7000 is used for mac tools, moving to 7001 to avoid conflicts.
Previous image was failing to run tooling as it has been moved around in previous versions. It was based on 3.4. Bumped to 3.7.x as base image
