Added support for Verifiable Credentials Data Model 2.0:

All examples are now VC 2.0.
Added disclaimer to JWT External Proof about current revision in VC-JOSE-COSE spec.
Added notes about credentials issued with VC 1.1 in the verification section.
Added notes about credentials issued with VC 1.1 in the verification subsection of JWT External Proof.
Added section about JSON-LD schemas
Added section about VC 1.1 Data Models, to support compatibility in displayers.
Fixed some names in the document (scopes, endpoints, etc)
Added test in the displayer profile of the Conformance and Certification Guide anout verification of VC DM 1.1 credentials.
