Fixed sol-coverage

Description

This PR updates the global-hooks.ts files in tests of the contracts/ directory to allow the sol-coverage tool to be used to generate coverage reports.

Testing instructions

In desired contracts package:

• yarn build
• yarn test:coverage
• (for html report) yarn coverage:report:html

Types of changes

• Bug fix (non-breaking change which fixes an issue)

Checklist:

• Prefix PR title with [WIP] if necessary.
• Add tests to cover changes as needed.
• Update documentation as needed.
• Add new entries to the relevant CHANGELOG.jsons.
