Feature request : work without schema registry

While schema registry is widely used with Kafka, debezium does allow connectors to work with plain kafka. Therefore, would be really good to have the repo to do the same as well.

Hi @hgbink -- I realize I am very delayed in replying to you here, but: is this something that might still be of use to you? If so, what manner of serialization would you prefer for the messages produced to Kafka in this case? Just JSON text?
